Blueberries: Nutrient Retention Depends on Handling and Consumption, Researchers Say

A daily serving of blueberries may not deliver the full measure of the fruit’s nutritional value unless attention is paid to storage, preparation and the foods consumed alongside the berries, according to a report by The Epoch Times. Scientists and nutritionists cited in the report state that blueberry health benefits are tied to compounds called polyphenols, specifically anthocyanins, which produce the fruit’s deep blue coloring and account for as much as 80% of its polyphenol content.

Pairing Blueberries With Other Foods

The foods consumed with blueberries can alter the body’s response to the fruit, according to research cited in the article. Because the health effects tied to anthocyanins persist even after the compounds are transformed by digestion, consumers who maintain regular consumption of blueberries in fresh, frozen or cooked form will capture more benefit than those seeking only raw berries.
